Pat, EVERYBODY likes sloppy joes, right? even the kids who had never had them before and turned up their adorable little noses at first (because we have a couple of 'neat freak' kids in this group-Presbyterians, dontcha know) once they had a bite, they just inhaled those joes.
the leftovers were even better last night - I was out of buns, so I served 'open-face' style with corn on the cob.
btw - there's a good frozen beef stew for the crock pot that I really like, and it's just right for 2 hearty appetites - BANQUET crock pot classics, beef pot roast - but I doctor it up a little - I toss in some leftover beef cubes (or the smallest piece of beef in the meat dept. cut up) because sometimes there isn't much meat in those pkgs. and I add a lot more water than it suggests 'cause we like lots of gravy.

Love the crock pot beef stew in a bag as well and I also doctor it up!! This is only when I don't have the time or where-with-all to make it from scratch!

Today I have stroganoff in my crockpot. I mix together a can of cream of celery soup, a can of cream mushroom soup, and a package of Lipton's Beefy onion soup mix. Stir together and then add a pound of round steak cut in bite sized pieces. Cook on low for 6-8 hours and serve over egg noodles. Yum! Reading about the sloppy joes reminded me that I haven't made that in a while. Sounds great. Wendy in Mich

Here in NJ slopppy joes are a different breed of cat. They make a cold sub, put cole slaw on it and that's their version of sloppy joes. Humph. Not to this OH girl.

No, Pat, it's a sub (cold meat) and then just coleslaw (northern slaw not southern) and it is from the S/E Orange area. I've never heard of it either. And believe me it was a shocker when I first saw and then ate them. The BIL of DD's first and deceased DH owns a deli and this is what he makes and calls sloppy joe's. They are sloopy but they are not the joes' I remember and ear.

Yesterday I did Jambalaya in the crock pot - diced chicken, sausage slices and diced tomatoes, etc. Took longer to cook than I thought it would, and we'll be having it again tonight, but yummy - NEXT TIME, I'll use shrimp, too. there are tons of recipes with all sorts of ingredients - so I took my own liberties and used what was on the pantry shelf.

on the first serving, I put it over the rice, on the second night, the leftover rice is IN the jambalaya! I've found recipes for it both ways - and also with POTATOES! my impression is that 'jambalaya' is southern for 'whatever you have'...

In Memphis, a bbq sandwich has slaw on it. After all the time I've lived here, I still think that is strange. I prefer my slaw on the side.

at a certain point going south slaw goes on the sandwich.. above the line it never does unless it's called a 'southern' style.. hehe!!!

Finally bought a new Crock Pot last week and then I made a great soup with chicken tenders (frozen and unbreaded) in quart of chicken stock. Added sliced carrots, chopped fresh roasted green chilis, chopped cilantro, chopped white onion, salt and pepper. Just before serving I added a couple cups of cooked rice. It was great!!!
Next day the rice had absorbed almost all of the liquid so added more but it was not the same and not nearly as much flavor as the first day. Still have a large frozen amount so will have to add lots more liquid when I serve it next. From now on I will add the rice just before serving!
I am looking forward to making lots of great things during the fall and winter!! Karen
