Looks good Pat...but bread usually goes right to the hips.  My doctor said I liked carbs...and I agreed!  My aunt gave me a recipe for molasses bread.  It was yummy...but still fattening.

Judee I love good healthy bread and have wanted to learn to make it all my life.. so that is going to be my vice.. of course I won't eat a whole loaf at once....  2 pieces for breakfast or lunch  and freeze the rest

going to make a 2nd loaf today and adjust what I did.... also get a thermometer to test my oven temp so will do that too

I've made white bread from scratch ever since I was a teen.  My mother used to make 7 loaves every week.  We were 5 kids and loved toast made from home made bread...still do.  I make whole wheat rolls once or twice a year.  But have them for breakfast, lunch and supper!  Even bought a bread machine and made whole wheat bread...and boy the lbs went on fast!  So I gave away my machine and just buy whole wheat bread... Tongue

I LOVE home made bread.  I use my breadmachine to mix and raise the dough.  Then I punch it down and roll it out into this "holey" loaf pan I have and let it raise again.  I get nice crispy/hard crust that way.... love it!   I've made country white, half wheat/white, and recently one with wheat/white/oats in and they have all been good.  I also add 1tbs italian herbs for a nice tasty option! Smiley

I would love to do this with you, but I don't have a "big red", or anything similar.  I guess I will live vicariously through you!  Might have to get the book just to follow along with you!

Thanks Pat.  I was at Amazon reading about the book, and I thought that might be the case.  I will be ordering it in a few days.  Tomorrow is payday, so I can't order it today.  I do have a pizza stone so I am good there.

There next book also looked interesting with the healthy breads.  I can't wait to play!

I have not read the healthy breads yet.. but the first has whole wheat and other things!  I just pulled loaf 2 out of the oven... tops a bit too brown..

this first loaf was with bread flour as I didn't have any UNbleached.. so first loaf didn't rise as much.. was too dense.

read FAQ and this time let it rise on the counter much longer (as they recommend).. and let it bake a bit longer

last loaf from this batch is rising in a ball in the Fridge... will give that option a try!

Next batch I'll have the all purpose UNbleached and try the basic recipe again!

I love home made bread. I usually make a honey wheat at the holidays. Breads are now on the no list here as hubby is counting carbs as his blood sugar has been high. I told him I was not giving up my morning bagel thins.  I love bread with my homemade soups but do not have time to make my own when working, or we eat very late which does not work for me.  But weekends I can make bread. Smiley

this bread is very fun to make!!!  The first time I started making this was two years ago and was so surprised how easy and quick and VERY TASTY!!  I haven't made it for awhile and am going to get back at it NOW!!  I need to get a round container to hold the dough....I don't like it in the square corners!!   Right now I have cinnamon rolls rising!!
