Tamale Pie


1 1/2 lb ground beef browned
1 onion chopped
1 clove garlic
1 can corn, drained
olives sliced (you choose how much)
pgk of taco seasoning.
1 can tomato sauce
1/4 tsp chili powder
2 t brown sugar
4oz cheddar cheese grated.
2 pkgs corn muffin mix, see directions on pkg - small ones, add 1 tb sugar to mix


brown the ground beef and onions, add the taco mix and rest of ingredients, making
a taco mixture.  Put in the bottom of a 13 x 9 pan.  Preheat oven to 400 degrees.
Sprinkle with cheddar cheese. Spread the corn muffin mix on top of the meat mixture
and bake at 400 degrees x 40 minutes.  Enjoy!

Ok I'll "bite' on this topic...

Pat travels a lot and sometimes I don't go along. Now I do most of the cooking at the Sloanie ranch and Pat is a bit of a picky eater. So I make meals (not fancy) that she likes. But when she is away I break out the super convenient-easy to make-good tasting guy food. This is one of my recent favorites. Just wish i could get Pat to enjoy them....so convenient.

 I buy many pounds of ground beef and brown it, and freeze it in ziploc freezer bags.  3 cups to a bag is equal to about 1 lb of raw meat.  Then when I'm in a hurry, I pull out a bag,  remove it from the bag into a bowl or plate, and microwave it about 3 minutes to thaw, and presto, browned ground beef.

This is a great time saver, and usually DH browns the meat for me.

Quick Yummy Sandwich

1 long Italian bread from the grocery bakery
1 lb ground beef, browned
1 c. sour cream
Dash of Worcestershire sauce
Salt and pepper to taste
Shredded cheese, optional

Preheat oven to 350 degrees.  Slice the bread in half lengthwise and place the two halves cut side up on a baking sheet.  Spread a very thin layer of butter or margarine on each piece of bread.  Mix the meat, sour cream and seasonings together.  Spread on the bread.  Sprinkle with cheese, if desired.

Bake about 20 minutes until hot and bread is crispy.  Slice into wedges.  Serve with a side salad.

Pat, I posted another beef recipe, because I knew it in my head.  I will get some chicken recipes soon, especially for the crockpot.

OMG -- Gregg and my dh, Dwaine, have something in common!  My dh has also discovered this wonderful, shelf stable survival food!  He esp. likes the pot roast.  I like the ravioli.  I try to keep them on the shelf for those times when I get lost in the process....

I also use the 'precooked ground beef' idea - I get the ground beef and the ground turkey in bulk, cook them up and store them in 1 qt freezer bags - just enough for the 2 of us, and perfect for sloppy joes, chili, spaghetti, etc.

I also buy the full pork loin when it's on sale, cut it into roasts & chops (dh helps with this) and freeze.  The chops thaw quickly - the roasts are perfect for the slow cooker with a pile of onions, potatoes, carrots, a pkg of onion soup mix and 2 c water and a dash of wine, sage or other seasoning of your choice.

I recently discovered a "convenience" food by accident. I was making chicken salad for a shower for 75. Cooked 8 chickens, chopped the meat and froze in 5 cup quantities in zip locks. The shower shrunk so I have cooked, chopped chicken on the freezer. My son wanted me to make nachos the other night so I pulled out some of the chicken, chopped it a little finer, then into a frying pan to heat up. Added cumin, garlic salt, onion powder and whatever spices, and some salsa. Heat thoroughly. Had some "scoops" chips and spread them on cookie pan. Put a dab of refried beans in each, topped with chicken, sliced black olives and cheese. Into the oven long enough to melt cheese and dinner for 4 with some raw veggies and dip. It was really quite good. Tonight I have a Caesar Salad bag mix and will make that and top with chopped chicken. Yeah, no cooking! Smiley

Easy Peasy Chicken and Noodles

1. Can of cooked chunks of chicken (it's really quite good)
2. Small bag of amish style noodles
3. Box of Swanson Chicken Broth (no MSG!)
4. Tiny bit of dry yellow food coloring.
5. About a cup or so of water, add more if needed

Cook for about 20 minutes till noodles are done. Serve with
Bob Evans mashed potatoes (try them, they are REALLY good)
Serves 2-3

I'm not sure if slow cooker food qualifies as 'fast' dinner, but it doesn't take long to throw it all in the pot, and I serve two dinners with each batch - my husband is begging me to make the following again soon:

toss the following into the slow cooker in this order:
1 pkg onion soup mix
2 cups water - stir together before adding the following:
1 lb pork roast, cut into 2" cubes
1/2 cup chopped celery
1 cup baby carrots (or more, if you like them)
1 large onion, peeled & quartered
1 cup broccoli florets - fresh if possible, if frozen, that's ok
4 potatoes, unpeeled, quartered

cover & cook on high until you can smell it all the way to your sewing room, check on it, stir it, turn it down to warm until dinner time.  Serve with chunky bread slices.
makes 4 hearty servings
