can't wait to try and make it or the kahula  squares

I love crop mode!  use it all the time as I always get too much in my pix.  I crop to focus on exactly what I was trying to take a pix of  Roll Eyes

My MIL had the best peanut butter cookies yesterday.  Its probably a recipe that everyone has but me, but here it is.

1 c. peanut butter, crunchy or smooth
1 c. splenda (or sugar) she used splenda
1 egg.

Mix together.  Drop onto cookie sheet and press with a fork.  Bake at 350 until done.

They were yummy!

wow those cookies sound great! I love a REALLY good Peanut Butter cookie!

One time at a bakery I asked the young gal what type of cookie was in one stack. She reached in and took a bite of it!!  I was laughing SO HARD and she thought that seems pretty normal!

I would have cracked up too!!! ....what if she had slipped it back in there - I would have been looking for "Candid Camera"!!!!

Thought I'd share with you the way Tammie does her Quesadillas - they really very good and easy: 

 Not quite a recipe, just a guideline to using the ingredients you have on hand. 
 
Flour Tortillas
Meat (Chicken or Steak - whatever I have from leftovers)
Onions
Peppers
Shredded Cheese (we always have cheddar, but if you like Monterey Jack that would be good in these as well).
Salsa
Sour Cream
Guacamole
 
 If you don't have left over chicken or steak, cook some!  (grill it or in skillet).  Set aside.  NOTE: It doesn't really take a lot of meat since you're adding onions, peppers and cheese.  For the 4 of us, one leftover piece of chicken is all I use.
 
Sautee onions and peppers on medium heat in skillet with a small amount of oil.  Shred the meat you have or slice it thin.  Add to onions and peppers only till the meat is heated up.  If you want this to be a little spicy or have more mexican flavors, add southwest seasonings (teaspoon or so).  If you don't have a mix, you can add cumin, lawry's season salt and pepper to taste.
 
Heat a separate skillet that is about the size of the flour tortillas you purchased (I buy the larger, 10" size).  Spray with Pam then place flour tortilla in it.  To make it easy for me to flip over, I then add the onion/pepper/meat mixture to HALF of the tortilla and then top that with shredded cheese (don't be skimpy on the cheese).  Now, flip the tortilla half that you didn't put anything on over the side that has all the good stuff.  Should look like a half moon.  Now press the edges down.  Flip over, heat slightly, then you're done.  Place on plate and cover to keep it warm, then continue on to the next  quesadilla till your mixture is gone or you have used all flour tortillas.
 
Serve: We cut into triangles and serve with salsa, sour cream and/or guacamole.  As a side dish, we usually have black beans and chips.
 
Here's how I make my guacamole if you want to make it instead of buy it.
 
1 avocado (if buy and plan to make the same day, make sure you get one that is already a little soft).
Cream Cheese (I don't really measure this, but if I had to guess I probably add 2 TB or so).
Sour Cream (I don't measure this either, maybe about 1/2 c)
Salsa
Lime Juice
Salt & Pepper
 
Scoop out the avocado and mash it really good.  You can do this with a fork, but if you have an immersion blender or small food processor they work best!  Add cream cheese to avocado and mix well.  Next add sour cream, a large spoonful of salsa, squeeze of half a lime and then season with salt & pepper.  This is great with chips as is, but we also like to scoop some on to the quesadilla.

My girls used to like the cheese quesedillas (sp?)  I just shred up a variety of cheese (cheddar, montery jack, pepperjack).  Lightly butter 1 side of flour tortilla place in hot pan.  add cheese.   as cheese melts and gets soft, fold in half and serve!

Actually, Tammie can make anything look so simple!  She does watch the food channel a lot and enjoys cooking - so do the girls!  She usually plans her meals, but works long hard days (very demanding) and comes home and cooks almost EVERY night.  But, she thinks it's the best part of her day - tho there ya go, guess it's just how you look at things!! LOL
