Cheesy Zucchini Bread

1/4 c. dry minced onion
1/4 c. butter, melted
2 1/2 c. biscuit mix
1 T. dry Parsley
1/2 tsp. dry Basil leaves, crushed
1/2 tsp. dry oregano leaves, crushed
1/2 tsp. garlic salt
1/4.c. milk
3 eggs
1 1/2 c. shredded fresh zucchini (no need to peel)
1 c. shredded sharp cheddar cheese

Heat oven to 350 degrees.  Grease and flour 9" round cake pan.  Stir onion into melted butter.  Mix together the onion mixture, biscuit mix, milk, seasonings and eggs.  Beat vigorously for one minute.  Stir in remaining ingredients and spread in pan.  Bake about 40 minutes or until done and brown.  Best served hot.  Freezes well after baking.  Just thaw and heat.

This is so good.  I can make a meal off of this!

Around here the joke is "Don't leave your car door unlocked, or the Zucchini "Fairy" will visit you"...often with more than you can use.
Our local Extension office published a Zucchini cookbook. I'll find out if they are still available.
