Cheesy Zucchini Bread
1/4 c. dry minced onion 1/4 c. butter, melted 2 1/2 c. biscuit mix 1 T. dry Parsley 1/2 tsp. dry Basil leaves, crushed 1/2 tsp. dry oregano leaves, crushed 1/2 tsp. garlic salt 1/4.c. milk 3 eggs 1 1/2 c. shredded fresh zucchini (no need to peel) 1 c. shredded sharp cheddar cheese
Heat oven to 350 degrees. Grease and flour 9" round cake pan. Stir onion into melted butter. Mix together the onion mixture, biscuit mix, milk, seasonings and eggs. Beat vigorously for one minute. Stir in remaining ingredients and spread in pan. Bake about 40 minutes or until done and brown. Best served hot. Freezes well after baking. Just thaw and heat.
This is so good. I can make a meal off of this!

Around here the joke is "Don't leave your car door unlocked, or the Zucchini "Fairy" will visit you"...often with more than you can use. Our local Extension office published a Zucchini cookbook. I'll find out if they are still available. Linda P in IL

LOL! That is what I miss about an 'office'.. we always got goodies.. but none of my neighbors have a good enough garden (or ANY garden) with veggies....

okay these have 3!! yes just ingredients!!! I think even Pat would have these things on hand!! 1 egg 1 cup of creamy peanut butter 1 cup of sugar yup that's it! mix roll into balls and flatten with a fork place on greased cookie sheet or use parchment paper bake 375 for 8 to 10 minutes
I didn't believe the gal that gave me this recipe but I just made a batch and hope they last till my meeting tomorrow! makes about 3 dozen

Boy, do they look good enough to eat!!! I don't bake very much anymore - just 2 of us here and I eat all of them! But, I am going to make these for dinner party tomorrow!! Karen

Betty I could ALMOST make them.. NO EGGS.. ROFLOL! I only buy those when I need them! Are they really that good??? Wow!!

Baking a Frozen MZ Smith's Cherry pie tonight. Does anyone have a FABULOUS Cherry pie recipe? I have a good frozen crust... but tips/links to GREAT crust will also be accepted... oh... sending a FINISHED pie would be fine too.. just saying...
